Sigá (Prawn and Okra Stew) is a traditional Guinean (from Guinea-Bissau) recipe for a classic stew of prawns in a red palm oil, bitter tomato and okra base flavoured with hot chillies. Ingredients:
400g okra, stem ends removed
100ml red palm oil (citi)
1kg peeled prawns
salt, to taste
1 onion, chopped
200g bitter tomatoes (jagatu), cut into slices
hot chillies, to taste (about 6 habaneros)
Method:
Combine the prawns, onion and chillies in a pan with a little water. Simmer gently for about 6 minutes or until the onions are tender and the prawns are cooked.
Add the okra, bitter tomatoes and red palm oil with a few tablespoons of water. Bring to a simmer, cover the pan and cook for about 20 minutes, or until all the ingredients are tender.
