This is a rich tomato-based arrabiata-style sauce containing fish pieces that's an excellent sauce for pasta.
Ingredients:
4 spring onions, very finely chopped
1 tbsp finely-chopped garlic
1 tbsp olive oil
240g peeled and chopped plum tomatoes
8 fresh basil leaves, finely ripped
3 tilapia fillets (or any firm non-oily fish) cubed
dash of hot chilli sauce
salt and pepper to taste.
Method:
Heat a pan on medium heat, add the olive oil and fry the garlic and spring onions until translucent. Add the tomatoes and the basil then season with salt and pepper and cook for about five minutes (or until the tomatoes break down into a sauce). Add the cubed fish and simmer on low heat until the fish is tender. Add a dash of hot sauce and cook for a further minute.
This sauce is an excellent accompaniment for pasta and should be served with a grating of parmesan cheese and a twist of black pepper along with crusty white Breads.
