Cassava pudding is the Solomon Islands’ answer to a cosy dessert. Sticky, sweet, and slightly chewy, it’s like a tropical hug in every bite.
Ingredients:

300g grated cassava
250ml coconut milk
100g sugar (or palm syrup)
1 tsp vanilla extract
Banana leaves (for wrapping, optional)

Method:

Mix all ingredients together to form the batter. Make the banana leaves flexible by either parboiling or by passing over a naked flame for about 30 seconds. Wrap the grated cassava mixture in the banana leaves (or bake in a dish), and steam or bake until firm (30-40 minutes).

Slice and enjoy warm or cold.
