In essence this is a shawarma seasoning blend that's combined with garlic paste, tomato purée, olive oil and vinegar to form a paste. This is a key flavouring for preparing Levantine shawarmas.
For the Shawarma Paste:
1 garlic clove, pounded to a paste
1 tbsp tomato purée
500ml (2 cups) olive oil
250ml (1 cup) white vinegar
4 tbsp sea salt
Method:
Begin with the shawarma paste. Mix all the spices and salt in a bowl then work in the tomato purée, garlic paste, oil and vinegar to form a paste. Store any leftovers in a lidded jar in the refrigerator.
If you just want the shawarma seasoning blend then combine the black pepper, allspice, garlic, cloves, cinnamon, nutmeg, cardamom, chilli powder, turmeric, paprika and oregano with the 1 tbsp salt in a jar and store in a cool, dry, place.
