Shaaria (Fried Sweet Vermicelli)
Shaaria (Fried Sweet Vermicelli) is a traditional Sudanese recipe for a classic dessert of fried pasta nests that are boiled and finished in a butter, sugar and sultana (or coconut) sauce. Also transcribed as Sheria or Sheriyah this is a classic dessert that is common to both Sudan and South Sudan.
Ingredients:
200g pasta nests
120ml sesame oil
180g sugar
1/2 tsp salt
2 tbsp butter
2 tsp sultanas or coconut (optional)
Method:
Put some oil in a pan and use this to fry the pasta nests until golden. Pour a little boiling water over the top and immediately cover with a lid. Take the lid off to let the steam escape then, after a few seconds, add more water so that the pasta is almost completely covered (add the coconut or sultanas at this point, if using).
Add the salt, then cover the pan and allow to cook for about 8 minutes. Stir-in the butter then mound the sugar over the top. Stir gently until the sugar has dissolved and the pasta is tender.
