Seco de Chivo (Dry-fried Goat Meat) a Classic Ecuadorian recipe for a dish of goat meat cooked in beer with tomatoes, bell peppers, garlic and herbs until the meat is tender and the mixture is dry.

Ingredients:

1kg goat meat
2 red onions, chopped
3 bell peppers, chopped
3 large tomatoes
200ml beer
1 tbsp garlic
1 tbsp mixed herbs, chopped
salt, black pepper, ground cumin and hot chilli powder, to taste
oil for frying

Method:

Wash the goat meat and cut into strips then mix with the garlic, salt, black pepper and cumin.

Combine the onions, bell peppers and tomatoes in a food processor. Blend with the beer until smooth.

Heat the oil in a pan, add the goat meat and fry briefly until browned, then stir in the sauce mixture. Bring to a simmer, cover the pan and cook for about 20 minutes, or until the meat is tender.

Stir in the herbs and serve hot, accompanied by rice.
