Seafood and Bacon Kebabs

Seafood and Bacon Kebabs: Classic British recipe for a barbecue dish of prawns (shrimp), mussels and bacon with courgettes (zucchini) that are threaded on skewers and cooked on a barbecue (grill)
Ingredients:
300g unsmoked back bacon
225g raw king prawns
400g plump mussel meats
2 courgettes (zucchini)
1 lemon
1 tbsp olive oil
1 tbsp fresh dill, finely chopped, to garnish
salt and freshly-ground black pepper, to taste
lemon wedges, to accompany
Method:
Cut each rasher of bacon lengthways into strips about 1cm thick. Cut each strip in half widthways.
Wash the prawns and pat dry then place in a bowl. Take the mussel meats (remove from their shells is fresh) and add to the bowl with the prawns. Season with salt and black pepper.
Trim the ends of the courgettes then slice into 1cm thick rounds. Cut each slice in half.
Cut the lemon into thin wedges.
Wrap a strip of bacon around each prawn and mussel then thread these onto a kebab skewer, alternating with courgette pieces and lemon wedges (you should have enough for 8 skewers).
Brush the kebabs with oil, then set on an oiled barbecue rack over hot coals. Cook, turning frequently, for about 4 minutes, or until lightly golden on the outside and cooked through.
Serve two skewers per portion and accompany with salad leaves and coleslaw. Sprinkle the kebabs with chopped dill and garnish with lemon wedges.
