Ingredients:

1 onion, chopped
6 parsley sprigs, chopped
8 potatoes, peeled and grated
juice of 1 lemon
4 eggs, separated
95g plain flour
2 tbsp olive oil
4 tsp baking powder
1/2 tsp ground cinnamon
salt and freshly-ground black pepper, to taste

Method:

Beat he egg yolks until pale and creamy and whisk the egg whites until they stand in stiff, glossy, peaks.

Combine the onion, parsley and potatoes in a clean kitchen towel and wring to remove the excess water from the vegetables. Transfer the mixture to a bowl, add the lemon juice and mix in with a fork. Now add the egg yolks, oil, flour, baking powder and cinnamon. Season with salt and black pepper and stir to blend. Quickly fold-in the egg whites, making certain that you do not over-mix to drive out the air.

Heat your waffle iron and grease lightly with a little oil or melted butter. Add the waffle mixture about 120ml (6 to 8 tbsp) at a time and cook until the steam stops escaping and the waffles are golden brown (about 8 minutes). These can be served either with maple syrup and cinnamon for breakfast or they can be served with eggs and bacon. These waffles can also be used as an accompaniment to a main meal.
