Savoury Kale Colcannon

This is an interesting variant of Irish colcannon (a blend of mashed potatoes and kale or cabbage) that I came across recently. It contains bacon in the mix for a savoury note and it's sufficiently different from the more commonly-encountered colcannons to warrant its own entry.

Ingredients:

500g curly kale
150g unsalted butter, cubed
2 rashers of bacon, sliced crossways into thin strips
8 spring onions, thinly sliced
4 large potatoes, quartered
a little cream
salt and freshly-ground black pepper, to taste

Method:

Bring a pan of water to a boil. Add the kale and cook for 5 minutes. Drain and chop finely then set aside.

Add 2 tbsp o the butter to a frying pan over medium heat. Add the bacon and cook for 5 minutes, stirring occasionally, until the bacon turns golden brown. Add the spring onions and cook for 2 minutes more. Now stir in the kale and take the pan off the heat.

Place the potatoes in a large pan and cover with cold water. Bring to a boil and cook for 20 minutes (or until soft when pierced with the point of a thin-bladed knife but not breaking apart). Drain the potatoes thoroughly and return to the pan. Add the remaining butter and mash until smooth. Beat with a wooden spoon until soft and creamy (add a little cream if desired).

Stir in the kale along with the bacon and spring onion mixture. Season to taste and serve.
