Ingredients:
450g mixed mushrooms (preferably wild mushrooms)
5 tbsp unsalted butter
2 tbsp shallots, finely chopped
salt and freshly-ground black pepper, to taste fines herbes
Method:
Wipe the mushrooms with a dry cloth then chop into generous chunks. Melt the butter in a large pan over high heat then add the shallots and fry for about 4 minutes, until soft but not coloured.
Add the mushrooms and stir-fry quickly for about 2 minutes then season to taste with salt and black pepper. Sprinkle with the fines herbes then turn into a bowl and serve.
