This is a classic simple white sauce coloured with spinach that's typically served with chicken, poached fish and eggs

Method:

Bring a pan of water to a boil, add the spinach and herbs then cook rapidly for 5 minutes then drain before passing through a fine-meshed sieve to purée. Warm the sauce through, add the spinach puree and stir until the sauce is coloured a delicate green.

Ensure it's thoroughly heated through (but do not boil) and serve immediately.
