Sauce Chivry is a traditional French recipe for a classic green sauce made from a veloute sauce base flavoured with tarragon, chervil and chives that's coloured green with spinach. The full recipe is presented here and I hope you enjoy this classic French version of: Sauce Chivry.
Bring a pan of water to a boil, add the spinach and herbs then cook rapidly for 5 minutes then drain before passing through a fine-meshed sieve to purée. Warm the sauce through, add the spinach puree and stir until the sauce is coloured a delicate green.
Ensure it's thoroughly heated through (but do not boil) and serve immediately.
