Sauce Chien (Dog Sauce)

Sauce Chien (Dog Sauce) is a traditional Martinique recipe for a classic raw salsa of onion, tomato, shallots, garlic and parsley in a lemon juice, oil and vinegar base that's served with grilled meat, fish and lobster. Ingredients:

3 spring onions, finely sliced
1 tomato, finely diced
1 onion, peeled and finely diced
2 shallots, peeled and finely diced
1 large clove of garlic, peeled and crushed
3 sprigs of parsley, finely chopped
juice of 1 lemon
150ml oil
1 tsp vinegar
2 tbsp hot water
salt and freshly-ground black pepper, to taste

Method:

Combine the spring onions, tomato, onion, shallots, garlic and parsley in a bowl.

In a separate bowl, whisk together the lemon juice, oil and vinegar. Add the hot water and whisk to emulsify then season to taste with salt and black pepper.

Pour over the mixed vegetables and toss to coat.

This sauce is typically served with grilled meats, fish and lobster. Though not included in this recipe a dash or two of hot sauce lifts the character of the dog sauce considerably.
