Saté (Marinated Kebabs) is a traditional Aruban recipe for a classic Indonesian-inspired dish of cubed meat marinated in onion, lemon juice, oil, soy sauce and coriander then threaded on skewers before coating in oil and soy sauce before grilling on a barbecue. The Dutch introduced this recipe from Indonesia to Aruba where it has reached the status of a national dish.
Ingredients:
1/2 onion, coarsely chopped
1 garlic clove, minced
juice of 1 lemon
1 tbsp sugar
120ml soy sauce
1/2 tsp salt
1/2 tsp ground coriander (or 1/2 tsp ground ginger, if using pork)
120ml oil
1.2kg cubed beef, pork or chicken
120ml oil
2 tbsp soy sauce
Method:
Combine all the ingredients for the marinade in a bowl. Whisk to combine then pour over the meat and toss to combine. Cover and set aside to marinate for 2 hours. At the same time, take about 18 wooden skewers and soak in a bowl of water.
Thread the meat onto the skewers then roll in the oil and soy sauce mix before frying on a griddle pan or cooking on a barbecue. Cook for about 12 minutes, turning frequently to ensure even cooking.
