Sangría Especial (Special Sangria)
Sangría Especial (Special Sangria) is a traditional Spanish recipe for a classic chilled drink of red wine blended with fruit, brandy and triple sec that's finished with sparkling lemonade. This is a chefy version of traditional Spanish sangria that seeks to extract as much flavour as possible from the fruit.
Ingredients:
1 orange
1 lemon
1 peach (or 3 plums), pitted and roughly chopped
1 pear or apple (cored and coarsely chopped)
200g caster sugar
1/2 cinnamon stick
200ml water
200ml brandy
200ml triple sec
200g (1 punnet) strawberries, halved
750ml bottle of Spanish red wine, chilled in the refrigerator
500ml sparkling lemonade, chilled in the refrigerator

Method:
Wash the orange and lemon and peel off strips of the peel with a potato peeler. Shred the peel crossways into thin strips.
Using a sharp knife, remove the remaining peel and pith from the citrus fruit (discard this). Cut the orange and the lemon into segments (discard the membranes).
Place the orange and lemon flesh along with the strips of zest in a saucepan. Add all the remaining fruit (except the strawberries) in the pan along with the sugar, cinnamon, water, brandy and Triple Sec.
Bring the mixture to a boil, reduce to a simmer and cook for 1 minute then take off the heat before adding the strawberries.
Set aside to cool, then transfer to the refrigerator to chill (preferably over night to allow the fruit flavours to infuse the syrup).
When ready to serve, fill a large jug 1/3 full of ice cubes, then pour in enough of the fruit syrup to come 1/2 way up the jug. Add wine until the jug is nearly full then top with the lemonade.
Stir with a long-handled spoon and serve immediately.
