Samp and Beans Croquettes

After making samp and beans last night, I had a big batch left over. This was deliberate as I wanted to see if I could make croquettes from the leftovers. As with any breading you need something to make the bread adhere. You could use beaten egg, but here I am using mayonnaise (I was out of eggs at the time).

Ingredients:

1 batch chefy samp and beans
70g (1/2 cup) plain (all-purpose) flour
250ml (1 cup) mayonnaise (a tangy one is best)
1 tsp finely-grated lemon zest
Leaves from 2 sprigs of thyme, chopped
2 tbsp grated cheese (I used parmesan, but cheddar would work just as well)
Dry breadcrumbs for coating
Oil for frying
Salt and freshly-ground black pepper, to taste

Method:

Warm the samp and beans in a pan, scatter over the flour and stir to combine. Take off the heat, turn into a bowl and allow to cool to room temperature. Transfer to the refrigerator and chill for at least 90 minutes (this firm up the mixture and makes it easier to handle).

Stir the lemon zest and thyme and cheese into the mayonnaise and season to taste.

Heat a 1cm depth of oil in a deep frying pan. Once the oil is hot, form the samp and beans mixture into croquettes or patties. Dip in the mayonnaise mixture then coat in the breadcrumbs. Transfer to a breadcrumb covered plate as you form the remaining mixture.

Set the croquettes or patties in the frying pan (do not over crowd) and fry for about 4-6 minutes per side, or until coloured golden brown. Drain on kitchen paper and serve hot.

These can be served as an accompaniment, but also work just as well as a snack or starter accompanied by a chilli-based dipping sauce.
