Salmon Brochettes

Salmon Brochettes: Classic British recipe for a barbecue dish of bread topped with tomato sauce and salmon and bell pepper kebabs.
Ingredients:
500g salmon fillet, skinned and cut into large chunks
1 tbsp cornflour (cornstarch)
1/2 tsp salt
1/2 tsp freshly-ground black pepper
1 small egg white, beaten
1 red bell pepper, de-seeded and cut into chunks
1 green bell pepper, de-seeded and cut into chunks
ciabatta bread, to serve
For the Tomato Sauce:
4 tomatoes, de-seeded and quartered
1/4 cucumber, peeled, de-seeded and chopped
8 basil leaves
6 tbsp olive oil
2 tbsp lemon juice
salt and freshly-ground black pepper, to taste
Method:
Place the salmon in a shallow dish then sprinkle with the cornflour and season to taste with salt and black pepper Add the beaten egg white and toss the salmon pieces to coat. Cover and set aside to chill in the refrigerator for 15 minutes.
Thread the salmon chunks onto 4 skewers, alternating with the red and green bell pepper pieces.
For the sauce, combine all the ingredients in a food processor and chop coarsely. Turn into a bowl and set aside in the refrigerator to chill.
Place the salmon kebabs over hot coals on a pre-heated barbecue. Cook for about 10 minutes, turning frequently and brushing frequently with olive oil (this will help prevent them from drying out).
Slice the ciabatta bread at a bias (an angle) to yield 4 long slices (these need to be as long as the skewers). Lightly toast the bread on the barbecue.
To serve, arrange the bread slices on plates. Spread the sauce over each piece of bread and top with a brochette.
Serve immediately.
