Salara

Salara Cake is a traditional Guyanese version of a cake of a yeasted dough with a sweet coconut filling that's rolled up and then baked. The full recipe is presented here and I hope you enjoy this classic Guyanese version of: Salara.

Method:

Begin with the dough: Beat the eggs in a mixing bowl then add in the water, sugar, oil, salt, and yeast to 450g of flour.

Mix the flour with the liquid and gradually add more flour while kneading until the ingredients come together as a soft but non-sticky dough. Shape the dough into a ball, place in a bowl, cover and set side in a warm place to prove for 20 minutes.

After this time, knock the dough back then set aside to rise again for another 20 minutes.

For the Coconut filling: In a saucepan, mix together the coconut, sugar, a few drops of food colouring, and 4 tbsp of water. Boil the mixture until it becomes dry then take off the heat and set aside to cool.

Knock the dough back then turn out onto a lightly-floured work surface and roll out into a rough rectangle. Spread the coconut filling over the top, ensuring it's evenly distributed.

Starting from one long end, roll up the dough into a log. Carefully transfer to a greased baking tray, setting the seam edge on the bottom then cover loosely with a cloth and set aside to prove for 200 minutes.

In the meantime, pre-heat your oven to 180°C.

Once risen, remove the cloth from the salara cake, transfer to the centre of your pre-heated oven and bake for 30 minutes, or until the cake is lightly browned on top and cooked through.

Remove from the oven and brush pancake syrup on top. Allow to cool then slice into rounds and serve with a cup of coffee or tea.
