Ingredients:
1/2 tsp coriander seeds
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp anise seeds
1 chicken, cut into eight serving pieces, or eight chicken parts such as thighs and drumsticks, skin removed

1 red onion, peeled and thinly sliced
3 garlic cloves, peeled and minced
1 shallot, peeled and minced

Colombo curry powder
2 habanero chillies, finely minced (remove the seeds and membranes if you want it milder)
400ml chicken stock
3 waxy potatoes, peeled and sliced into bite size pieces
1 carrot, scraped and sliced into bite size pieces
2 spring onions, chopped
Juice of 1 lime
2 tbsp fresh thyme leaves, minced
2 tbsp flat-leaf parsley, minced
Salt and freshly-ground black pepper, to taste
