This is a classic Saint Barthélemy dessert cake made with sweet potatoes and flavoured with cinnamon, ginger and allspice that's also known as 'Sweet Potato and Pumpkin Pound'.

Ingredients:

500g sweet potatoes, peeled and grated
400g pumpkin flesh, grated
2 eggs, beaten
2 tbsp butter, melted
250g brown sugar
250ml evaporated milk
1 tsp ground cinnamon
2 tsp freshly-grated ginger
1/2 tsp ground allspice
1 tsp vanilla extract

Method:

Combine all the ingredients in a bowl until thoroughly blended then turn into a large, well-greased shallow baking pan. Place in an oven pre-heated to 170°C and bake for about 60 minutes, or until golden brown on top and cooked through.

Allow to cool in the tin for 5 minutes then turn onto a wire rack, sprinkle the top with brown sugar and set aside to cool completely before serving.
