This recipe is an example of modern Irish cookery. Pork chops with a savoury herbed breadcrumb coating are fried and served with that traditional Irish accompaniment, colcannon.
Ingredients:
60g plain flour
3 eggs
2 tbsp Worcestershire sauce
6 fresh sage leaves, finely chopped
2 sprigs of thyme, finely chopped
100g breadcrumbs
100g Parmesan cheese, grated
4 pork chops
4 tbsp vegetable oil
salt and freshly-ground black pepper, to taste
1 batch
savoury kale colcannon to accompany
Method:
Season the flour then scatter evenly over the surface of a flat plate.
Beat together the eggs and Worcestershire sauce in a bowl. In a separate bowl, mix together the breadcrumbs, cheese, sage and thyme. Season to taste then set aside.
To coat the pork, take the chops, one at a time, and ip first into the flour, coating the meat evenly, then dip it into the egg mixture, then press firmly into the crumb mixture, ensuring that the chops are evenly coated. Repeat the process with the other chops.
They can be store in the refrigerator for a few hours, if needed, before cooking.
To cook, heat the vegetable oil in a large frying pan over medium heat. When hot add the pork shops and cook for between 6 and 7 minutes, or until they sizzle in the oil and the crumb coating is a golden brown colour. Turn over and cook for about 5 minutes on the other side.
Serve hot, accompanied by the savoury kale colcannon.
