This is an unusual dish that uses the classic Cambodian fish sauce based condiment Tirk Prahok a salty, spicy and sour fish sauce pickle served as a condiment to flavour a mix of beef and onions.

Ingredients:

300g boiled beef, shredded
150ml Tirk Prahok
1 red onion, halved and finely sliced
4 garlic cloves, finely sliced
6 spring onions, finely sliced
pared zest of 1 lemon, finely shredded
4 tbsp Thai holy basil, finely shredded
2 hot green chillies, sliced into rings
2 hot red chillies, sliced into rings
2 tbsp Anchovy Sauce
salt and black pepper, to taste
lettuce leaves to serve

Method:

Mix the beef and tirk prahok in a bowl then add all the remaining ingredients. Toss to combine and serve in a bowl with the lettuce leaves.

To eat, spoon the beef mixture into a lettuce leaf, roll up and eat.
