Sach Ko Nung Slirk S'krey Chomkak (Lemongrass Beef Kebab)
Sach Ko Nung Slirk S'krey Chomkak (Lemongrass Beef Kebab) is a traditional Cambodian recipe for beef steaks marinated in a lemongrass and spring onions sauce, threaded on skewers and barbecued. Ingredients:
800g sirloin steak, thinly sliced
3 garlic cloves, minced
50g lemongrass, minced
1 spring onion, minced
60ml water
3 tbsp soy sauce
2 tbsp vegetable oil
1 tbsp oyster sauce
1 tbsp honey
1/4 tbsp freshly-ground black pepper
4 hot red chillies (eg birdseye), chopped
Method:
Place the beef in a large bowl, meanwhile whisk together all the remaining ingredients to form a marinade and pour over the beef. Toss to combine then cover and place the meat in the refrigerator to marinate for at least 3 hours (preferably over night).
Soak your bamboo skewers in water for 30 minutes and when ready thread your beef onto these. Either cook the meat on a barbecue or under a medium grill (about 5 minutes per side, depending on the thickness of the beef).
Serve either with peanut sauce or (more traditionally) Cambodian fish pickle sauce.
