Ingredients:
200g sugar
180ml water
1/2 tsp ground cinnamon
2 tbsp cornflour
60ml cold water
120ml rum
Method:
Combine the 200g sugar with 180ml water and the cinnamon in a pan then bring to a boil and continue boiling for five minutes over medium-high heat, stirring constantly.
In the meantime, whisk together the cornflour and cold water to form a smooth slurry. Stir this mixture into the hot cinnamon syrup. Continue cooking, stirring constantly, until the mixture has thickened. Take off the heat and stir in the rum then allow to cool slightly.
Serve warm as an accompaniment to baked pies and steamed puddings.
