Ruggata (Almond Barley Water Cordial) is a traditional Maltese recipe for a drink of ground barley water flavoured with almond essence and sweetened with sugar. The full recipe is presented here and I hope you enjoy this classic Maltese version of: Almond Barley Water Cordial (Ruggata).

Ingredients:
500g ground barley (if not available, grind pearly barley in a coffee grinder)
100ml almond essence
250g granulated sugar
2l water
Method:
Combine the barley and water in a pan, bring to a boil and cook for 30 minutes. Pass through a fine meshed sieve and discard the solids.
Pour the liquid into a pan, add the sugar and almond extract then bring back to a boil and cook for a further 30 minutes, making certain that all the sugar has dissolved. Take off the heat and allow to cool before pouring into bottles and storing in the refrigerator.
To use, combine a little of the cordial with cold water and serve.
