Rougail Mangue (Mango Rougail) is a traditional Réunionaise (from Réunion) recipe for a classic condiment made from a blend of diced green mangoes, onion, chillies, salt and oil that's allowed to marinate in the refrigerator before serving. Ingredients:
2 green mangoes
1 small onion, finely sliced
2 chillies
salt
oil
Method:
Peel the mangoes then finely dice the flesh. Place in a bowl, cover with lightly-salted water and set aside to soak for 20 minutes. After this time, drain the mango pieces then place in a clean cloth and squeeze to dry.
In a mortar, add the chopped chillies and a little salt then pound to a paste. Combine the onions with the mango and stir in the chilli paste. Add about 3 tbsp oil to bring the ingredients together. Place in a bowl, cover with clingfilm and chill for at least 60 minutes.
