Method:

Pat the chicken dry then rub all over with the cut side of the halved garlic cloves. Place any remaining garlic in the bird's body cavity. Squeeze the lemon juice into a small bowl then place the lemon halves in the bird's body cavity. Brush the chicken with half the lemon juice.

In another bowl, combine the spices and salt. Rub all over the outside and inside of the bird then tie the legs together. Add the oil in a large oven-proof frying pan or skillet then add the chicken, breast side up. Add the remaining juice to the pan. Baste the chicken with the pan juices then transfer to an oven pre-heated to 200°C. Roast for about 80 minutes, basting with the pan juices occasionally, or until the chicken juices run clear when pierced in the thickest part of its thigh.
