Riz au Lait de Coco de Comores (Comorian Rice with Coconut Milk)
Riz au Lait de Coco de Comores (Comorian Rice with Coconut Milk) is a traditional Comorian recipe (from the Comoros islands) for a classic accompaniment of rice cooked in coconut milk. Ingredients:
1kg long-grain rice
500ml coconut milk
pinch of salt
Method:
Combine the coconut milk and salt in a large pan, bring to a boil, reduce to a simmer and cook for 5 minutes.
Wash the rice, stir into the hot coconut milk mixture then bring to a simmer. Cover and cook gently for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
