Rivmaiz Cepti Kartupeli (Breaded Roast Potatoes) is a traditional Latvian recipe for a classic dish of boiled potatoes that are rolled in a mix of breadcrumbs and egg before being oven roasted and served with a tomato-based sauce. Ingredients:
2 medium eggs, beaten
300g breadcrumbs, toasted
6 medium potatoes, boiled and peeled
440g tinned tomatoes, chopped
3 tbsp butter
salt and freshly-ground black pepper, to taste
Method:
Combine the eggs and breadcrumbs in a shallow dish. Roll each whole potato in this mix then transfer to a greased baking dish before transferring to an oven pre-heated to 180°C. Roast for about 45 minutes, or until heated through, crisp and golden.
In the meantime melt the butter in a pan and use to fry the tomatoes until thick and bubbling. Season with slat and black pepper then turn the potatoes into a bowl, top with the tomatoes and serve.
