Redbush Tea

The redbush, Aspalathus linearis is one of the few species used by the native San peoples of the Kalahari that has been adopted by Europeans. Indeed, you can find tea bags of dried redbush (rooibos) leaves to make tea in British supermarkets.

As a tea it is made throughout Southern Africa. This is the classic version, as made in Botswana. You also get Iced Tea versions and Vanilla-flavoured versions in South Africa.

Ingredients:

1 tsp redbush/rooibos tea leaves (or 1 tea bag) per person
1 1/2 mugs cold water per person
sugar and milk, to taste

Method:

Combine the redbush leaves and water in a saucepan. Bring to a boil, reduce to a simmer and cook gently for 10 minutes.

Strain the liquid from the leaves, pour into cups or mugs and add sugar and/or milk, just as you would for Indian tea.
