Red Wine Lamb Skewers: Classic British recipe for a barbecue dish of lamb marinated in wine, oil, brandy, onion and herbs threaded onto skewers with button onions and button mushrooms that are cooked on a barbecue.
Ingredients:
500g lean lamb
12 button onions (or shallots)
12 button mushrooms
For the Marinade:
150ml red wine
24 tbsp olive oil
2 tbsp brandy
1 onion, sliced
1 bayleaf
1 sprig of thyme
2 sprigs of fresh parsley
Method:
Trim away any excess fat from the lamb then cut the meat into large serving-sized pieces.
For the marinade, combine the wine, oil, bandy, onion, bayleaf, thyme and parsley in a non-reactive dish. Add the lamb and toss to coat in the marinade. Cover the dish and set aside to marinate in the refrigerator for at least 2 hours (best if left over night).
When ready to cook, bring a pan of water to a rolling boil. Add the button onions (unpeeled) and blanch for 3 minutes. Drain the onions and refresh in a colander under cold, running, water then set aside to drain completely.
Drain the onions and remove their skins (these should now slip off easily). Take the lamb out of the marinade (reserve the liquid for basting). Thread the meat onto skewers, alternating with the onions and mushrooms (if using wooden skewers soak in a bowl of water for 20 minutes before use).
Barbecue the kebabs over hot coals for between 8 and 10 minutes, turning frequently and basting with the reserved marinade as you do so.
When cooked, transfer the lamb onto a warmed serving plate. Serve immediately, accompanied by a green salad and cherry tomatoes.
