Raitas are side dishes in Indian cuisine made of dahi (yogurt, often referred to as curd) together with raw or cooked vegetables, more seldom fruit, or in the case of boondi raita, with fried droplets of batter made from besan (chickpea flour, generally labeled as gram flour). It is often referred to as a condiment, but unlike traditional western condiments like salt, pepper, mustard and horseradish that make dishes more spicy, a dish of dahi or raita has a cooling effect to contrast with spicy curries and kebabs that are the main fare of some Asian cuisines. In Indian cuisine, some type of flatbread may be eaten together with raita, chutneys and pickles.
Ingredients:
1/2 tsp Oil
1/4 tsp Mustard seeds (Rai/ Kadugu)
1/2 tsp White Urad Dal (Split and skinned black lentils)
1 sprig Curry leaves (leaves only)
500ml (2 cups) Curd (Dahi / Yoghurt)
1 Beetroot, finely grated
2 Green Chillies, finely chopped
1 tsp ground Cumin (Jeera)
Salt, to taste
Method:
In a large mixing bowl, combine the yogurt, salt, ground cumin, green chillies and grated beetroot. Whisk well to combine. Check the salt and spice levels and adjust to suit your taste. Transfer the raita to a serving bowl.
For the seasoning, heat the oil in a tadka pan (or a small frying pan; at a pinch use a metal ladle); add the mustard seeds, urad dal and allow it to crackle and the dal to turn golden brown and crisp. Finally stir in the curry leaves and turn off the heat.
Pour the seasoning mixture onto the Beetroot Raita and serve either as a side dish along with your main course or with parathas (eg paneer stuffed ragi parathas).
