Raparperi ja Spruce Vihje juoma (Rhubarb and Spruce Tip Drink)
Raparperi ja Spruce Vihje juoma (Rhubarb and Spruce Tip Drink) is a traditional Finnish recipe for a classic rhubarb drink flavoured with spruce tips and a little sweet cicely. Ingredients:
2l young, tender spruce tips
1.2kg rhubarb stems
a few sweet cicely leaves
500g granulated sugar
25g citric acid (used as a preservative)
4l water
Method:
Remove the papery covering from the spruce tips and rinse them. Chop the rhubarb then combine in a large pan with the spruce tips, sweet cicely leaves and water. Bring to a boil and cook for 3 minutes.
At this point stir in the citric acid then take off the heat, pour into a non-reactive bowl, cover and set aside over night. The following day, return to a pan then stir in the sugar. Bring to a boil and cook for 2 minutes then take off the heat and allow to cool.
As soon as the mixture has cooled, strain off the liquid and bottle. It will keep in the refrigerator for two weeks.
