Rapa Nui Dumplings are a traditional dish from Pascuense (Easter Island) cuisine, featuring a unique blend of flavours and local ingredients.

Ingredients:

140g taro root, peeled and diced
75g sweet potato, peeled and diced
70g cassava, peeled and diced
120ml coconut milk
1 tsp salt
60g cornflour (cornstarch)

Method:

Bring a large pan of water to a boil then add in the diced taro, sweet potato, and cassava. Return to a boil and cook until tender (about 15 minutes).

Drain the cooked vegetables and transfer to a large bowl. Mash the vegetables and mix in the coconut milk and salt.

Add the cornflour to the mixture, a little at a time, until a dough forms.

Divide the dough into small portions and shape into dumplings.

Bring a pan of water to a boil, add the dumplings and cook for about 5–7 minutes, or until they float to the surface.

Remove the dumplings with a slotted spoon and serve hot.
