This recipe is for a classic, multi-coloured, sherbet in a 2l freezer-proof tub (an old ice-cream tub is excellent. I'm making a five-layer version with some of the colours in a few of the layers intensified by the addition of food colourings. For a patriotic dinner or event you could make a three-layer version by adjusting the quantities accordingly.
As colour options, you can use lemon for white, add green food colouring to lime, orange food colouring to orange, red to strawberry or raspberry, blue to blueberry etc.
Method:
Take the lemon sherbet, soften it, then spread in an even layer in the base of your tub (make certain the layer is completely even). Transfer to the freezer to harden.
Now take the blueberry sherbet and soften (add a few drops of blue food colouring, if desired). Place this on top of the white sherbet in the tub then smooth the surface once again. Return to the freezer to harden then repeat the layering process with the orange, lime and raspberry sherbets.
Allow to harden completely and when ready to serve take out of the tub and slice into portions. Each portion will have a pretty banded pattern.
