Orange Sherbet

This is the a recipe for orange sherbet, a classic American frozen dessert or snack that can also be used as a palate cleanser between the courses of a meal.

American-style sherbets are very similar to sorbets in that they are basically frozen fruit juices, however sherbets tend to either have milk added before freezing or contain gelatine and this gives the product an extra creaminess.

Ingredients:

2 tbsp lemon juice
240ml orange juice
150g sugar
360ml water
1 1/2 tbsp cornflour
1 egg

Method:

Add the water and sugar to a pan and heat until just boiling. Add the cornflour to a bowl and pour the syrup over the top, whisking all the while. Beat the egg then add to the syrup and cornflour mixture. Finally add the fruit juices, allow to cool then place in the refrigerator for 2 hours.

Pour the mixture into the bowl of an ice cream machine and churn according to the manufacturer's instructions.
