Ragoût de Porc au Citron Vert (Ragoût of Pork with Lime) is a traditional Senegalese recipe for a classic stew of pork, onions, tomatoes and carrots cooked in a stock flavoured with curry powder, chillies and lime juice. This is another classic recipe from the Casamarance region of Senegal. Though the country is mainly Moslem, there are sufficient numbers of Christians and those of other faiths to make pork a meat that is quite readily available. This is a very refreshing stew that suits the humid climate very well.

Ingredients:

1kg pork, cubed
2 onions, chopped
3 garlic cloves, finely chopped
2 tbsp butter
2 tbsp soya oil
3 tomatoes, chopped
3 carrots, scraped and sliced
1 dessert spoon curry powder
3 cloves
6 limes
1 hot chilli, pounded to a paste
salt and freshly-ground black pepper, to taste

Method:

Heat the butter and oil in a casserole dish. Add the pork and fry until browned all over. Stir in the onions, carrots, garlic and cloves and fry for 2 minutes. Now add the curry powder and stir to mix before adding the tomatoes, salt, black pepper, chilli and the juice of two limes.

Pour over just enough water to cover, bring to a boil then reduce to a simmer, cover the pan and cook for 50 minutes.

About 5 minutes before the dish is due to be done add the juice of 2 more limes. Thinly slice the remaining limes and add these as well.

Serve hot, accompanied by rice.
