Quizaca (Cassava Leaf Stew) is a traditional Angolan recipe for a classic stew of cassava leaves and prawns (shrimp) in an onion and peanut butter base. The full recipe is presented here and I hope you enjoy this classic Angolan version of: Cassava Leaf Stew (Quizaca).
Wash the cassava leaves thoroughly. Place in a pot, cover with water, bring to a boil and drain immediately.
Heat the oil in a pan, add the onions and the garlic and fry for about 4 minutes or until softened. In a separate pan fry the prawns until just coloured then turn onto a chopping board and cut into pieces.
Add the prawns to the onion mixture then dilute the peanut butter in 250ml hot water and stir into the pan. Season with salt then add the cassava leaves. Cook for about 40 minutes, or until the greens are very tender.
