This is a recipe for making quick Doubanjiang (Chinese chilli bean paste) in a pinch if you don’t have any to hand. I haven’t given precise amounts, only ratios as this will allow you to make anything from a couple of tablespoons for a recipe to a couple of jars for storage. If you don’t have a bean paste you can even use hoisin sauce at a pinch. Doubanjiang is meant to be salty, so don’t skip on the salt in this recipe.
Ingredients:
1 part bean paste (sweet red bean paste or just mashed beans)
1 part chilli oil
1/10 part sea salt
Method:
Making this is simplicity itself. Combine all the ingredients in a bowl, mix thoroughly then either use or store in a jar. If making for later use, place the jar in the refrigerator.
