Queso Frito (Fried Cheese) is a traditional Spanish recipe for a classic starter or snack of manchego cheese wedges that are breaded and fried in olive oil until golden before serving. This is a classic Spanish snack that, traditionally, is made from Manchego, a sheep's cheese that comes from La Mancha. Queso frito should be eaten hot and is one of the most popular Spanish tapas dishes, often served with fino sherry, or with Valdepenas, a red wine from La Mancha.

Method:
Remove the rind from the cheese and cut into 1cm wedges.
Sift the flour onto a small plate, then dip each cheese wedge into the flour, then into the beaten egg and then into the breadcrumbs to coat evenly.
Heat half the oil in a non-stick frying pan over medium heat. When hot, add the cheese wedges in small batches and cook until golden brown (about 45 seconds per side). Remove with a slotted spoon and drain on kitchen paper and you cook the next batch.
Sprinkle the fried queso frito with a little of the smoked paprika and serve hot, accompanied by membrillo and olives.
