This twist on the Middle Eastern classic is perfect for any Halloween party and it makes a great dip. Basically, you do not just have to use beans to make hummus (anything that can be mashed or puréed will do). This recipe shows that to perfection with its blend of the traditional chickpeas and pumpkin purée and you can also substitute other ingredients like sweet potatoes, squashes and even firm fruit (try a pear version, you will be surprised).
You could buy canned pumpkin for this recipe, but it's so easy to make your own pumpkin purée that there's no need to bother. Just peel and de-seed pumpkin then steam until tender. Mash with a fork then press through a fine-meshed sieve with the back of a spoon to purée.
Ingredients:
450g cooked chickpeas (tinned is fine), drained
250g pumpkin purée
4 tbsp tahini (sesame seed paste)
1 tbsp sunflower oil
3 tbsp runny honey
1 tbsp lemon juice
1 1/2 tsp ground cinnamon
1/4 tsp ground coriander seeds
1/4 tsp ground allspice
1/8 tsp freshly-grated nutmeg
1/8 tsp ground cloves
1/2 tsp fine sea salt
cayenne pepper, for dusting
Method:
Simply combine all the ingredients in a food processor.
Taste and adjust the honey, lemon juice and salt levels to what you prefer.
Chill in the refrigerator for at least 2 hours before serving.
Spoon into ramekins, dust with a little cayenne pepper and serve with crackers, dry biscuits or toast.
