This is a classic Indian-inspired curry from Durban in South Africa. This is a dry, fragrant curry from Indian Mughal style of cookery.
Ingredients:
1.5kg chicken pieces (a mix of wings, thighs and drumsticks)
1 large onion, finely chopped
2 garlic cloves
3cm length of ginger, peeled and finely chopped
1 tsp poppy seeds
2 tsp cloves
1 tsp ground allspice
3cm length of cinnamon stick
2 tbsp plain yoghurt
3 tbsp oil or ghee
1/2 tsp freshly-ground black pepper
1 tsp
Cape Curry Powder
salt, to taste
1 tbsp
tamarind paste
Method:
Heat the oil in a large, heavy-based saucepan over medium heat then stir in the onion, spices, chicken and curry power. Cook the mixture for 5 minutes, stirring constantly. Season with taste to salt then reduce the heat to its lowest possible setting, cover the pan and cook for 20 minutes, stirring occasionally.
At the end of the 20 minutes stir in the yoghurt and tamarind paste then cook for 1 minute more.
Serve hot, accompanied by rice.
