Puerto Rican Sofrito

Sofrito is a mixture of peppers, onions, garlic and coriander, pureed together and used as a base for rice dishes, picadillo and more. This, in effect, is the Puerto Rican herb and pepper blend known elsewhere in the Caribbean as 'green seasoning'.

Ingredients:

5 green bell peppers seeded and chopped
2 red bell peppers seeded and chopped
4 cubanelle chillies seeded and chopped
12 aji dulce peppers seeded and chopped
650g Spanish onions chopped
135g garlic chopped
1 bunch of recao (culantro) chopped
1 bunch of coriander (leaves and stems) chopped

Method:

Working in small batches, blend the ingredients either in a food processor or blender. Use the onoins as the base, adding them first as they yield a lot of liquid when blended and will help blend the other ingredients.

As you process them, scrape each batch into a bowl and mix well to combine. Transfer to a sealed container then refrigerate (they will keep for two weeks). Beyond that point you can refrigerate in small batches (an ice cube maker is ideal) for long-term storage.
