Pudim de Peixe (Fish Pudding)

This is a dish that's prepared in many Portuguese-speaking countries. This specific version comes from Mozambique.
Ingredients:
5 tomatoes, blanched and peeled
3 onions, chopped
2 garlic cloves, crushed
salt, to taste
1/2 lemon
1/2 sawfish, cooked until tender then the meat picked off the bone and shredded
1/2 the weight of the fish in bread, crumbed
4 tbsp fine breadcrumbs, for topping

Method:
Mix the fish meat with 1 crushed garlic clove, salt to taste and the lemon juice. Set aside.
Heat oil in a pan, add the remaining garlic along with the onion and tomatoes. Bring to a simmer and cook for about 5 minutes, or until the tomatoes have begun to break down.
Drain the liquid from the fish and add this to the breadcrumbs. Now add enough water to just moisten the bread before mixing with the fish.
Stir in the tomato sauce then turn the mixture into a greased baking dish. Scatter the breadcrumbs over the top then transfer the pudding to an oven pre-heated to 180°C and bake for about 20 minutes, or until the pudding is cooked through and golden brown on top.
Serve hot, accompanied by chips (fries) and boiled vegetables.
