Here is a fantastic pink strawberry cupcake that will wow your girlfriend on Valentine's day.

Pretty in Pink Strawberry Cupcakes: An American recipe for a pink strawberry cupcake that makes a fantastic treat for your girlfriend on Valentine's day.

Ingredients:

1 batch (500g) copycat boxed strawberry cake mix (or 1 box [18 1/4 oz] strawberry cake mix)
200g strawberries, finely chopped (with juice)
180ml whole milk
180ml vegetable oil
4 large eggs
250g strawberry buttercream icing

Method:

In a bowl blend together the cake mix, strawberries, milk, oil and eggs. Mix until thoroughly combined.

Spoon the resultant batter into the wells of two 12-cup muffin tins that have been lined with paper cases, filling each well no more than 3/4 full.

Transfer to an oven pre-heated to 170°C and bake for about 22 minutes, or until the tops of the cupcakes are lightly golden and they are cooked through (a skewer inserted into the centre should emerge cleanly).

Take the cupcakes out of the oven and immediately transfer to a wire rack to cool.

When cold, pipe or spread the strawberry buttercream over the top.
