Potatoes with Pine Nuts: An Irish recipe for an accompaniment of potatoes baked in a clay dish with onions, currants, olives and pine nuts with a red vermouth and basil dressing.
Ingredients:
1kg small new potatoes, scrubbed
2 small red onions, thinly sliced
2 tbsp currants
3 tbsp pine nuts
2 tbsp olive oil
2 garlic cloves, crushed
12 black olives, pitted and sliced
1 bayleaf
salt and freshly-ground black pepper, to taste
125ml red vermouth
2 tbsp fresh basil, finely shredded
basil sprigs, to garnish
Method:
Take a clay baking dish and soak in clean, cold, water for at least 15 minutes.
Drain the dish then arrange the potatoes inside. In the meantime, mix together the onions, currants, pine nuts and olive oil in a bowl. Add the garlic, olives and the bayleaf then scatter over a generous sprinkling of the seasoning. Scatter over the potatoes then pour over the vermouth.
Cover the dish and transfer to an oven pre-heated to 230°C. Cook for 60 minutes, or until the potatoes are tender and cooked through.
Remove from the oven but leave covered and set aside to rest for 10 minutes. At this point remove the lid and mix in the shredded basil. Garnish with the basil sprigs and serve.
