Ingredients:
1kg potatoes
300g beef
100g onions, finely chopped
100g pork fat
salt and freshly-ground black pepper, to taste
Method:
Take half he potatoes and grate them finely then set aside. Bring a pan of water to a boil, add the remaining potatoes and boil in their skins until almost (about 25 minutes) then drain and set aside until you can handle. Remove the skins then grate finely and combine with the raw, grated potatoes. Mix well and season to taste.
Bring another pan of lightly-salted water to a boil, add the beef and boil for about 40 minutes, or until tender. Remove the meat from the liquid and mince then combine with the meat.
Using lightly-floured hands take some of the potato mixture and shape into small cakes or patties. Fill with some of the meat mixture then fold over and re-shaped into patties. Fry in melted pork fat (or lard) until golden brown all over (about 10 to 12 minutes per side). Serve hot.
