Potato-topped Pizza Squares: An Irish recipe for a starter of a potato pizza base with a potato, passata, cheese and cucumber topping that's cut into squares and served as a starter — this pizza works very well for barbecues.
For the Topping:
8 small potatoes peeled
salt, to taste
8 tbsp passata
60g Cheddar cheese, grated
cucumber slices, to garnish
sliced spring onions, to garnish
Bring a pan of salted water to a boil, add the potatoes and cook for 12 minutes. Drain and allow to cool slightly, then slice thinly.
In the meantime, knock the risen pizza dough and knead briefly. Roll out and use to line a rectangular baking tray (about 30 x 20cm).
Brush the top of the dough with oil then spread over the passata. Arrange the potato slices over the top and sprinkle with the grated cheese. Transfer to an oven pre-heated to 220°C and bake for 20 minutes.
Serve cut into squares or rectangles, garnished with the cucumber and the spring onion.
