Potato Sweets is a traditional Irish recipe for a classic sweet (candy) of butter, cream cheese, vanilla extract, icing sugar and coconut mixed until stiff that are shaped into potato forms, coated in ground cinnamon and chilled until hardened. These little confections aren't made with potatoes! Rather they're chilled mixtures of cream cheese and flaked coconut that are shaped to look like potatoes and rolled in cinnamon to give then an 'earthy' appearance.
Add the butter and cream cheese to a bowl and beat until smooth before adding the vanilla and icing sugar. Beat the mixture together until smooth Then add the coconut and combine evenly with the mix (this may be easier if you use your hands).
Roll the mixture into little potato shapes and roll through the cinnamon to coat. Place on a baking sheet and place in the refrigerator to chill and set. Once hardened, you can roll the sweets in cinnamon once more to give them a darker colour if desired.
