This is a British classic and makes a very warming (and comforting) winter warmer soup.
Ingredients:
400g floury potatoes, peeled and finely chopped
2 large leeks
40g butter
4 medium celery sticks, finely sliced
1.5 l chicken stock or
vegetable stock
small bunch of
parsley, finely chopped
250g black pudding
salt and black pepper to season
Method:
Trim the leaks and discard the outer leaves. Cut the remainder into rounds and rinse thoroughly. Transfer to a heavy-bottomed pan and add the butter. Cook over a low heat for twenty minutes and when the leeks begin to soften add the celery. Cook for two minutes then add the potatoes. Cover with a lid, cook for five minutes then add the stock. Raise the heat and bring to the boil. Turn down the heat to a gentle simmer then cover with a lid and cook for 25 minutes.
Allow to cool a little then transfer the soup to a liquidizer then pass though a fine sieve or a mouli (food mill). Transfer to a saucepan, re-heat then stir in the parsley and season.
Meanwhile cut the black pudding into 3cm segments. Fry until crisp then transfer the soup into bowls and lay a few pieces of the black pudding on top. Serve immediately.
