Potato Pizza

I first saw versions of this pizza in Sweden, where it's made from new potatoes. The combination of potatoes on a pizza base was so bizarre, yet so tasty that I had to produce my own recipe for the dish. Here is the result.

Ingredients:

1 batch perfect pizza base dough
4 tbsp crème fraîche
6 spring onions, sliced thinly
500g new potatoes, very thinly sliced with a mandolin
200g Gruyère cheese, grated
leaves from 6 sprigs of rosemary
rosemary leaves, to garnish

Method:

Prepare the pizza base according to the perfect pizza base dough.

Divide the dough into four pieces and roll into balls. Knead until smooth then over and set aside in a warm place to rise for 30 minutes.

Roll each piece of dough into 20cm rounds and arrange on two baking trays lined with floured baking paper. Spread each pizza base with 1 tbsp crème fraîche then arrange the spring onions and potato slices on top.

Sprinkle over the cheese and rosemary then transfer to an oven pre-heated to 220°C (Gas Mark 7) and bake for about 15 minutes or until the base is golden brown and crisp and the potatoes are cooked through and tender.

Garnish with ore rosemary sprigs and serve.
